The catering industry is full of career opportunities and there is currently a shortage of qualified caterers in the UK.
If you are ambitious, hard-working and want to become a qualified professional, this one year advanced qualification can help you succeed in this dynamic industry. It is perfect if you have worked in a professional kitchen for some time, or have a lelve 2 qualification.
This one-year industry-standard qualification in professional cookery will give you the opportunity to develop your skills for further study, specialisation or perhaps move into a management role.
During the course you wil study a range of topics including:
- Gastronomy and food culture
- Product development
- Advanced skills and techniques in butchery, fish, and shellfish dishes
- Maintaining food safety when storing, preparing and cooking food
- Preparing, cooking and finishing complex soups and hot sauces
- Supervising food and beverage service
- Understanding legislation in food and beverage service
Assessment is recorded by synoptic testing, written papers and project work throughout the duration of the course.
What could I progress on to?
Once you have completed the course you can progress onto Higher Education to study subjects such as Hospitality Management at degree level.
You may look to start your career in the industry as a Brigade chef or join a Management training scheme in hotels or global companies
Uniform is required for this course.
